Prosecco - Not Another Bubble

In the heart of the Veneto region, in the northern area of the province of the unfairly overlooked town of Treviso, lies a wine region which has recently gained more and more popularity among wine lovers: the area of Prosecco. 

Prosecco is a DOC sparkling wine produced using the Charmat method common in a wide area of northern Italy, but only the one produced and bottled around the small towns of Conegliano and Valdobbiadene gains the DOCG classification, and must, therefore, satisfy more restrictive production guidelines. 

Within the limited area of DOCG “Conegliano Valdobbiadene Prosecco” there also are two crus: Rive and the most renowned, Cartizze superiore, from the name of the restricted area in which the best grapes are grown. 

Prosecco is not just a pseudo-Champagne that costs less. It is a unique wine of its own, with its specific production process. 

It is made through the Charmat method (which in Italy is also known as Martinotti method, as it was first invented by Federico Martinotti, a winemaker from Piedmont, while Charmat invented a new specific equipment to realise it), because it allows wine to ferment and develop its perlage and, at the same time, preserve its innate flavors and scents, which are not so swayed by lying on yeasts, as occurs with the Champenoise method, the second fermentation takes place in autoclaves instead of in bottles, while the rest of the winemaking process is basically the same. 

This method results in a more fruity  and fresher wine, complex and well-structured in floral aromas, with gentle minerality and acidity, that makes it enjoyable throughout the meal. 

Gentle slopes and mild climate give the surroundings of Conegliano an idyllic look, while small towns and villages cherish small architectural treasures, such as a number of typical “villas” and beautiful churches, among which the one in Guia is assumed to have been designed by Antonio Canova. 

La strada del Prosecco is the Prosecco route wine enthusiasts can travel to discover the beauty of this territory, its important role in Italian history as well as the several wine cellars based here.

Guia, a hamlet in the municipality of Valdobbiadene, is also the home of one of the most eminent makers of Prosecco, famous Foss Marai. 

This cellar was officially established in the Eighties, but this family’s winemaking tradition originates far earlier, around the XVIII century.
